Production area: rural area of San Donaci the province of Brindisi

Harvesting: The harvest takes place early in the morning in the first ten days of September

Winemaking: After the harvest follows the de-stemming and the crushed grapes stop in a short cold maceration of 5-6 hours with subsequent soft pressing. Fermentation takes place at a controlled temperature of 15 ° - 16 ° C.

Maturation: 3 months in steel tanks and 2 month in bottle

Alcohol content: 12,5%

Tasting Notes: Soft pink with elegant purple reflections. Very pleasant olfactory perceptions reminiscent of crunchy pomegranate grains and red fruits of the undergrowth. On the palate it is rich in flavor, it is fresh and balanced. Tantalizing final with return of the fruit reminiscent of raspberry and pomegranate just bitten

Wine / food pairing: Pleasant and graceful, the Negroamaro rosé from Rurale perfectly marries aperitifs and appetizers. Particularly tasty cured meats and cheeses are enhanced by the crunchiness of the wine. Combined with salted scallops with capers and anchovies they are a tasty delicacy. A good starter? Ravioloni filled with pumpkin and pancetta cream.

Serving temperature: 10 - 12 ° C in large glasses that favor the maximum olfactory expression
