On the palate it reveals a spicy taste in good balance with the fruity one, with a very pleasant artichoke after-taste.

Exceptional when used raw, in all the typical dishes of the Mediterranean cuisine. The sensations of bitterness and spiciness are very evident, the sweetness is less intense, therefore the high olfactory-gustatory persistence makes it extraordinary in combination with bruschetta, pulse soups, salads and fish dishes. Excellent with grilled vegetables, fresh cheese and goat cheese.
