Deer ragout sauce

Perhaps the best known of the game ragouts, deer ragout has an intense flavor, thanks also to the long maceration in red wine, flavored with notes of fennel and cumin.

Pairings:

Excellent with polenta or egg pasta such as tagliatelle and pappardelle. Ideal for seasoning pasta or on toasted bread. It can also be served as finger food. Heat with a little olive oil or cooking water.

Color: Burnt umber

Tasting notes: Intense and warm, like Trentino red wine
