Production area: Sorso, province of Sassari. Located in the locality Lu Crabioni, at 70 mt. above sea level, well-ventilated

Vinification: The perfectly ripe grapes are selected and harvested by hand in small crates. The crushed raisins obtained are immediately cooled to a temperature of 7°C and sent to the press where a gentle pressing of the skins is carried out. After static decantation, the must is sent to fermentation which takes place at a temperature of around 18 degrees. The wine rests on its fine lees, periodically resuspended, for about six months, until bottling.

Tasting notes: Brilliant straw yellow color with greenish reflections. Intense and continuous with notes of pear and lime blossom, it is enriched with citrus and vegetal aromas. Kanimari is a dry and fresh wine, with a distinctly acidic perception where we first find the citrus scent. A warm, tasty and elegant wine with a long taste and olfactory persistence.

Wine Pairing: Classic fish wine, ideal for dishes such as grilled prawns and sea bass; but also fish soups, prey fish cooked with four Mediterranean flavors. Excellent as an aperitif.

Serving temperature: 8 - 10°C in large glasses which hinder maximum olfactory expression
