In the heart of the Torre a Cenaia estate, on the shores of a lake exposed to the sea breeze, the “Casone” vineyard is flourishing for over thirty years. Here, thanks to a careful selection of hand-picked grapes, the Cenaja Vermentino comes to life as our best vintage wine.
In the encounter between our land and the Tyrrhenian Sea, in a very windy terroir, under the wise management of a great Italian oenologist, this white wine takes on surprising tasting characteristics.
Grape variety: 100% Vermentino
Denomination: Toscana IGP
Production area: Cru "Cassone" Vineyard, estate of Torre a Cenaia Antica Tenuta Pitti, province of Pisa, Tuscany
Harvest: during the first 10 days of September
Vinification: Destemming, cold maceration in stainless steel, fermentation at controlled temperature in vitrified cement vats for 15-20 days
Aging: Aging on lees in vitrified cement vats for 3 months, then 1 month in the bottle
Tasting Notes: Straw yellow color with strong greenish reflections. Very intense and persistent with marked floral notes, fine and elegant. Fresh taste, fruity, velvety, enveloping, with a good body, soft and balanced
Wine / food pairing: It goes well with seafood, white meats, cold cuts, cheeses, mushrooms and truffles.
