Production area: Etna - Contrada Alboretto Chiuse del Signore (Linguaglossa)

Vineyards: 650-700 m a.s.l. | Bush vine and spurred cordon

Winemaking: Hand harvested late September; the grapes are cooled with carbonic ice to avoid oxidation. Soft pressing ensues and controlled temperature fermentation for 15 days.

Aging: batonnage for 3 months.

Tasting notes: Appealing nose with real character, aroma reminiscent of ripe fruit, ripe pear and hints of lemon, juicy apple and lime, with subtle undertones of earthy, smoky, and herbaceous nuances in the background. With some time in the glass, a subtle aroma reminiscent of white blossoms and aromatic herbs is showing up. The palate is defined by its harmony, emphasizing the minerality profile of Etna's soils; minerality and a good body draw a balanced sip.

Food pairing: Excellent with fish appetizers such as peppered mussels and salmon tartare. Ideal with fish ravioli, cuttlefish linguine, turbot steak, baked sea bream and vegetables.
