Grape variety: Minutolo. It is an aromatic white grape variety, typical of the Itria Valley, it is considered among the minor indigenous grape varieties, little cultivated because of its sensitivity to vine diseases. Vine with a strong personality, the origin of which seems to go back to Campania as a biotype modified over time, probably derived from Fiano.
Appellation: IGP Valle d'Itria
Production area: hills 350 meters above sea level in the Itria Valley
Harvest: the harvest takes place at the end of September, harvested in crates,
Vinification: the grapes are left to spend the night in a cold room with a temperature below zero (cryomaceration of the skin for 20 hours). The grapes then come off; followed by pressing, a short cold maceration then a gentle pressing of the marc. Fermentation at low temperature preserves aromas and freshness.
Maturation: 3 months in steel and 1 month in bottle
Alcohol content: 13%
Tasting notes: straw yellow color with golden reflections; intense and complex bouquet, with floral and fruity aromas; predominance of notes of rose, peach and tropical fruits such as pineapple and mango. Consistent and balanced taste with excellent acidity. Fresh and pleasant finish, with an aftertaste of tropical fruits.
Food and wine pairing: raw and cooked seafood, boiled and roasted fish, shellfish, delicate cheeses, not too seasoned risottos, vegetables.
Serving temperature: 8 - 10 ° C
