Grape variety: Montepulciano 100%
Montepulciano grown on the Abruzzo pergola at an altitude of approximately 450m above sea level. on soils exposed to the south – south/east which tend to be calcareous and rich in stone.
Management of the vineyards according to the organic production method Reg. (EC) n. 834/2007
Harvest: Harvested by hand and in 20 kg boxes when the grapes have reached full ripeness, generally in mid-October.
In the cellar: The grapes, once softly destemmed, undergo maceration for approximately eight or ten days. During this period the wine also completes alcoholic fermentation at a temperature not exceeding 20°C.
Aging: Maturation takes place in the tank where the malolactic fermentation ends. The refinement continues in large barrels for a further eight or ten months followed by a few months of rest in the bottle.
Sensory characteristics: Wine with an intense ruby red color with slight purple hues, tending towards garnet with aging. Aromas of red fruits and spices, intense and ethereal. Full, dry, harmonious, rightly tannic on the palate.
Pairings: Wine that gastronomically prefers braised meats, roasts, noble poultry and mature cheeses.
