Claudio and Roberto Fabris's Dairy
The Fabris family's DNA is ancient: it is that of the "cheesemakers," people capable of transforming milk into something vital for the tables of the poor, but also precious for those of the rich. Those were the days of the "Latterie Turnarie," where every day they produced what little they could, and it was done in cooperatives. This is where the first true "dairies" and the first historic "cheese factories" were born, those of small producers: and the cheesemaker often had a fixed salary. He was usually poor because the work was hard, but the money was short. Grandfather was the first: his name was Geremia Fabris, born in 1902, and he was supported by his wife, Adele Collavini, born in 1909, who lovingly supported him until his untimely death.
