DESCRIPTION

A dairy cheese made from pasteurized whole cow's milk and aged in red wine.

APPEARANCE

The rind is purplish due to aging, while the interior is ivory or pale straw-yellow in color with medium, evenly distributed holes.

FLAVOR

Sweet with lactic notes and light hints of wine, especially under the rind.

MATURING

At least 6 months.
