Harvest: Harvested at its technological maturity in order to obtain the desired sugar level and the right acidity. It is best not to anticipate the harvest too much to avoid obtaining herbaceous, sour products that do not have the maximum aromatic content.
In the cellar: The grapes are vinified "in white" (i.e. without contact with the skins). Fermentation with native yeasts is carried out at a controlled temperature.
Aging: Maturation takes place for a few months, in stainless steel tanks, on good fine lees which makes the wine acquire complex and important tones. The evolution of the wine continues with subsequent refinement in the bottle.
Sensory characteristics: Intense and brilliant cherry pink colour. On the nose it presents a strong olfactory presence of red fruit such as raspberries and pomegranate. Flavor and tannic sensation give great vitality to the wine. In the mouth, the tannin and acidity, well integrated, make the wine lively and fresh.
Pairings: Perfect to accompany appetizers, pasta, delicate cheeses, roasts as long as they are light. This wine is also perfect with simple dishes such as pizza.
