Vinification: before being pressed, the grapes undergo a brief withering for about a month, in order to improve the organoleptic characteristics of the wine. Fermentation takes place in stainless steel tanks. The wine is then "repassed" in the pomace used to produce amarone where fermentation continues for 5/7 days and is left to age in oak barrels for 18/24 months and further aging in the bottle for 6 months.
Tasting notes: intense color and aromatic scents enhanced by the technique of review and the short drying.
Food and wine pairing: ideal for meals in sauce, red meat or aged cheeses
Serving temperature: leave to decant for at least an hour and serve at a temperature of 18°C in large glasses that favor maximum olfactory expression
