1. The Star of the Evening: Forget Champagne, Long Live Prosecco !

we tend to bring out Champagne for special occasions. But for a convivial, fresh, and sparkling aperitif, the undisputed king is Prosecco. A word of caution, though: don't confuse an industrial sparkling wine with a true Prosecco PDO (protected designation of origin).
