In the Vineyard: The Trebbiano and Passerina grapes come from our vineyards located between Petritoli, Carassai, and Sant’Elpidio a Mare, on hillsides, on well-ventilated limestone-clay soils. Harvest occurs before full ripeness to preserve natural acidity and limit sugar accumulation, resulting in a naturally low-alcohol wine, without any intervention in the cellar.
In the Cellar: Vinification takes place exclusively in stainless steel, at a controlled temperature, to enhance the aromatic freshness and maintain the fruit's fragrance. No dealcoholization is performed: the final alcohol content of 9.5% ABV is the result of a clean, essential, and respectful approach to the grapes.
