Description

Grape variety: Verdeca. Old white grape of uncertain origin, quite widespread in Puglia. Its maximum productive and qualitative expression is linked to the territory of the Itria Valley, where it is cultivated in a hilly area with excellent sun exposure and well ventilated. These conditions allow to produce fresh and aromatic wines, delicately fruity and elegant, which have nothing to envy to other similar vines cultivated in the northernmost regions of the bunch.

Appellation: IGP Valle d'Itria

Production area: hills 350 meters above sea level in the Itria Valley

Harvest: The harvest generally takes place between the end of September and the beginning of October and is done in crates

Vinification: the grapes are left to stay overnight in a cold room with a temperature below zero (cryomaceration of the skin for 20 hours). The grapes then come off; followed by pressing, a short cold maceration then a gentle pressing of the marc. Fermentation at low temperature preserves aromas and freshness.

Maturation: 3 months in steel tanks and 12 months in bottle

Alcohol content: 13%

Tasting Notes: Bright yellow color with greenish reflections. Delicate notes of apple, citrus and hints of white fruit. Fresh and salty, it leaves a long and elegant finish.

Wine / food pairing: dishes based on fish, shellfish and seafood; delicate cheeses, unseasoned cold meats and vegetables.

Serving temperature: 8 - 10 ° C
