Harvest: The harvest of these grapes is carried out by hand in boxes of 20 kg each. Harvested in mid-November, it is obtained with the technique of drying the grapes in the vineyard by pruning the fruiting shoots below the first bunch. Drying leads to a reduction in the official yield dictated by the specification by 50%, with consequent concentration of sugars and all the other extractive substances that contribute to the composition of the bouquet of the wine.
In cellar: Maceration takes place in vertical winemakers with leaching programming and temperature control. The breaking of the cap is carried out several times a day for approximately 15 days, until the alcoholic fermentation is finished. The must is fermented with indigenous yeasts with approximately eight to ten days of maceration.
Refinement: Refinement until malolactic closure takes place in tanks. Once the malolactic fermentation is completed, it is aged for at least twelve months in medium-large oak barrels and subsequently the evolution of the wine continues in the bottle.
Sensory characteristics: Wine with a vivid ruby red color with slight violet nuances with a tendency towards garnet during aging. The bouquet is very intense and complex with notes of red fruit and spices. In the mouth it is full, elegant, velvety and very harmonious.
Pairings: Suitable for large roasts, game, noble game, braised meats, stews and mature or spicy cheeses. Ideal as a meditation wine.
Serving temperature: 16-18 °C
