DESCRIPTION
Caciotta produced with raw milk from cows raised in the Aurina Valley and fed on pasture when possible and hay the rest of the year; the rind is washed and refined with Mediterranean thyme and Alpine juniper.
APPEARANCE
Small caciotta with a washed rind covered in aromatic herbs; the texture is soft yet firm.
FLAVOR
Sweet, with a pleasant aroma of thyme and juniper, clearly recognizable and present on both the nose and palate. The thyme dominates the taste at first, then gives way to the resinous aroma of juniper.

At least 5 weeks

SUGGESTION
All Eggemoa cheeses have an edible rind; in fact, they are treated only with salt water and refined with natural ingredients added to the rind before packaging. We therefore recommend consuming the 100% edible rind for a more intense aroma: removing it would be a real shame! Try the interesting pairing with black tea.
