DESCRIPTION

A bloomy-rind cheese made with Italian buffalo milk and filled with a thin layer of pistachio paste and chopped pistachios.

APPEARANCE

The rind is thin and white due to the presence of mold; the texture is soft, free of holes, slightly chalky in the fresher cheese and creamy in the more mature cheese.

FLAVOR

Sweet, with good acidity and pleasant lactic sensations; the sweet, fragrant, and toasted notes of the pistachio are well-balanced.

MATURING

At least 10 days
