Vinification: Manual harvest. Harvest Period: First ten days of September. The grapes are harvested with careful selection of the bunches. As soon as they arrive at the winery, they are destemmed and pressed. They ferment in terracotta amphorae with 20% of their skins remaining. Aging: Aged on their skins in amphorae for approximately 9 months. The wine is neither filtered nor stabilized, so there may be a natural residue on the lees.
Appearance: Straw yellow with golden highlights.
Nose: An intensity that reveals beautiful herbaceous tones and a burst of white-fleshed fruit.
Palate: The palate is satisfying and marked by a lovely verve of freshness and savory flavor.
