DESCRIPTION
Pesto made with Genoese Basil DOP, extra virgin olive oil, Grana Padano DOP, Parmigiano Reggiano DOP, Pecorino Romano DOP, sea salt, and garlic.
APPEARANCE
It has a medium texture and a bright green color, virtually identical to fresh basil.
FLAVOR
Fragrant and not overly salty, it releases the full aroma of basil. The garlic flavor is delicate and not at all overpowering.
SUGGESTIONS FOR USE
Pesto should not be reheated; we recommend reserving a little of the pasta cooking water and mixing it with the pesto and pasta. Perfect as a condiment for bavette and linguine.
CURIOSITY
Prà Basil is considered the best basil: it is tender, pale green, with medium-small leaves and a delicate aroma, free from the minty hint found in other varieties. This is due to several factors—the microclimate, the proximity to the sea, the presence of waterways, the strength of the sun, and the unique ventilation—that characterize Pra', a town in western Genoa.
