DESCRIPTION
A coarse-textured cheese made with high-quality pasteurized milk from high-mountain farms in the Sesto Pusteria area.
APPEARANCE
Light to straw-yellow in color, the cheese is characterized by numerous irregular holes and a soft, almost creamy, malleable, and delicate texture. It has a natural pinkish rind resulting from light brushing with water, salt, and ferments, as well as aging in a high-humidity room. The cheese resists cutting but melts easily in the mouth.
FLAVOR
The aroma and flavor are sweet and slightly savory, with predominantly lactic notes reminiscent of fermented milk and yogurt. This cheese is particularly sought after for its harmonious texture and slightly tart character, as well as its nutty flavor in the part closest to the rind.
