Grape variety: Bianco d'Alessano. This white grape variety of uncertain origin has found its maximum expression in Puglia, specifically in the territory of the Itria Valley where its arid and elevated soils with good sun exposure allow the production of a fresh, delicate and fruity wine.
Appellation: IGP Valle d'Itria
Production area: hills 350 meters above sea level in the Itria Valley
Harvest: the harvest takes place between the last days of September and the first ten days of October
Vinification: Harvested in crates, the grapes are left to stay overnight in a cold room with a temperature below zero (cryomaceration of the skin for 20 hours). The grapes then stalk off; followed by pressing, a short cold maceration and a subsequent soft pressing of the marc. Low temperature fermentation preserves aromas and freshness.
Maturation: 3 months in steel tank and 12 month in bottle
Alcohol content: 12%
Tasting notes: intense yellow color, with greenish reflections in youth; delicate floral and white fruit aromas, including pear and peach. Important body, well balanced with the right freshness; pleasant, long and fruity finish.
Food and wine pairing: appetizers, soups and dishes based on fish and white meats, prepared with vegetables and cheeses with delicate flavors.
