Pignoletto is a typical white sparkling PDO wine from Emilia Romagna. Villa Di Corlo offers us here a very small production of 6500 bottles.
Varietal: 100% Grechetto Gentile
Denomination: Pignoletto PDO
Production area: in the Modena plain at Sozzigalli di Soliera
Vinification: the grapes immediately enter the soft press without going through the destemmer, only sorting is used, to have a more fruity and elegant color and fragrance. Then the cleaning of the must takes place, which is fermented at low temperature and the base wine is obtained.
Aging: refermentation in stainless steel vats, long Martinotti method, at low temperature for more than 9 months.
Colour: light bright yellow, with very fine and persistent perlage
Nose: scented with fruits and white flowers, bread crust.
Taste: sweet, persistent and enveloping.
Accompaniment: seafood, fish dishes, white meats
Serving temperature: 6-8°.
